Cherry Garcia Scones (Cherry Garcia is a Registered Trademark of Ben & Jerry's Ice Cream)



I love Cherry Garcia ice cream from Ben and Jerry's.  I love it so much, I created a scone to match.  This is a 5 minute recipe to prepare and 10 minutes to bake.  How can you not like that?

For some odd reason, scones have become our Memorial Day breakfast tradition.

(egg-free)

1 c. dried cherries
2 Tbsp. water
2 c. Bisquick
1/4 c. sugar
3 Tbsp. butter
1/2 c. milk
2 tsp. vanilla
3/4 c. chocolate chunks OR Ghiradelli Bittersweet Chocolate chips

Combine cherries and water in a bowl.  Cover with plastic wrap and leave a little corner open.  Microwave for 1 minute.  Set aside.

Preheat oven to 425 degrees.  Cut butter into Bisquick and sugar.  Add chocolate chunks to dry ingredients.  Drain cherry juice into milk and vanilla.  Add cherries.  Combine until just mixed.  Scoop by ice cream scoop (or scant 1/4 cup) scones onto lightly greased cookie sheet.  If you like, you can sprinkle with sugar.  Bake for 10-11 minutes.  Cool slightly and enjoy with a good cup of coffee.
